I don't know exactly what would happen in this very situation, but I'm pretty sure they will speak english.
As for an official language in volley ball, what can be told is that FIVB's website is only in english. And the FIVB magazine is either french/english or spanish/english , so you can add that french and spanish are considered of some interest for the FIVB.
I would not be surprised that french is some kind of official language, since the headquarters of the FIVB were in Paris and are now in Lausanne (french speaking part of the Switzerland). But I don't know if both fact are related or not.
