You'd have some matches with only two sets, could be less than an hour long. Not very nice for the spectators.
Maybe the rule could be like this:
Have a golden set whenever there are different winners (e.g. 2:3 and 3:0), but give an advantage of maybe 2 points per set to the team which has won more sets in the golden set. So if the matches end 2:3 and 3:0 the golden set would start with a score of 4:0.
With this rule it's always possible for the trailing team to still end up advancing.
